Biokef Pancakes

INGREDIENTS

  • 200 g biokef organic kefir

  • 2 medium eggs

  • 150 g plain flour (you can swap for spelt or wholemeal)

  • 1 tsp baking powder

  • 1/2 tsp soda

  • 2 tbsp of sweetener of choice

  • 1 tbsp of vegetable oil

 

INSTRUCTIONS

  1. Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the kefir and egg. Add the oil.

  2. Pour the kefir mixture into the flour mixture beat until you have a smooth batter.

  3. Heat a non-stick frying pan over a medium heat with a little bit of oil. When it's warm, add a ladle of batter. Repeat until all the batter is used up.

  4. Serve with maple syrup, fresh fruit and extra kefir, if you like.
