Biokef Muffins

INGREDIENTS

  • 200 g plain flour

  • 125 g golden caster sugar

  • 1 pinch sea salt

  • 2 tsp baking powder

  • 80 ml vegetable oil (Not strong in flavour)

  • 125 ml Biokef original kefir

  • 1 tsp vanilla extract

  • 1 egg

  • 150 g blueberries

  • Demerara sugar and almond flakes for the topping (optional)

 

INSTRUCTIONS

  1. Heat oven to 180 degrees. Mix flour, baking powder with sugar and a pinch of salt. Leave aside.

  2. In the second bowl mix kefir with oil, vanilla extract and egg.

  3. Combine wet and dry ingredients mix briefly (try not to overmix it) Add blueberries and gently fold them in.

  4. Put the paper liners in the muffin pan and fill them up to 3/4 in height. Sprinkle each muffin with a teaspoon of Demerara sugar and almond flakes if desired. Bake in at 180 °C for 20 to 25 minutes or until golden brown and the pick inserted comes out clean.
