Biokef Granola

INGREDIENTS

  • 50ml vegetable oil or coconut oil

  • 75ml maple syrup, golden syrup or honey (if granola doesn’t seem sticky, add a bit more)

  • 2 tsp vanilla extract

  • 400g old-fashioned rolled porridge oats

  • 100g seeds or nuts (I went for a mix of walnuts, hazelnuts, pumpkin seeds and sunflower seeds)

  • ½ tsp ground cinnamon

  • ½ tsp fine sea salt

  • 75g flaked almonds

  • 75g desiccated coconut

  • 100g dried cranberries (or any dried fruit of your choice)

  • 100g chocolate chips (I went for mix of dark and milk)

 

INSTRUCTIONS

  1. Heat oven to 180 degrees. Mix the oil, maple syrup, honey and vanilla in a large bowl. Add all the remaining ingredients, except the dried fruit, coconut and chocolate chips. Mix until all coated and looking sticky.

  2. Bake for 12 mins, then mix in the coconut and dried fruit, give it a stir on a tray and bake for another 12-15 mins more or until brown and crispy.

  3. Leave it to cool for at least 45 mins, stir in the chocolate chips. Serve kefir and fruit. The granola can be stored in an airtight container for up to a month.
